You can choose from a variety of seasonal menus (including vegetarian, vegan, raw, diet menu, etc.) prepared in a traditional way. In the Baron kitchen, we use many native cultivated and wild plants, so that our menus are varied and interesting in every season. As we use seasonal ingredients, there might be an occasional change to our menus. Our dishes are home-made from the scratch – therefore, advance booking is essential.

Baron seasonal lunch

TO BEGIN
  • Organic liqueur and organic herb cordial, seasonal pickled vegetables and wild plants, Lucania sausage on homemade bread with crispy kale chips.
SOUP
  • Beef soup with Pohorje beef and homemade Baron noodles, seasonal creamy vegetable soup (wild garlic, pumpkin, nettle, carrot, beetroot, etc.).
MAINS
  • Delicious Baron ribs or roast pork with plum filling, home-grown Pohorje-style chicken, organic Baron-style Pohorje beef.
SIDES
  • Organic home-grown potatoes with Baron vegetable broth, rolled cheese dumplings (štruklji) family-style, baked Tuscan kale with organic cheese, spelt polenta baked with goat cheese, roasted carrots with thyme and honey, horseradish with beetroot and raspberry cordial, roasted seasonal veg smothered in butter.
SALAD
  • Field salad, dandelion and beans pickled in homemade vinegar with organic pumpkin seed oil from our garden.
DESSERT
  • Baron layer cake with cottage cheese or walnut filling (gibanica) or apple strudel with poached Tepka pear and homemade jam.

COLD APPETISER
  • Beetroot and celery salad, Baron pâté with young cheese fried on a bay leaf, sage roll (Roman times).
  • Wild salad with a hard-boiled egg, kamut rolls with black flax seeds, nettle cottage cheese spread (late Middle Ages).
SOUP
  • Historical stew with spelt and lentils (Bronze Age).
WARM APPETISER
  • Lucania sausage, roasted carrots with thyme and honey, pear chutney (Roman times).
MAINS
  • Marinated beef cooked in wine with dried elderberries, semolina dumplings with grated cheese or vegetable pie with roasted beetroot.
DESSERT
  • Poached pears sweetened with honey and refined with blackcurrant sauce (Bronze Age).
  • Apple omelette with walnuts and Jurka grape sauce (late Middle Ages).
  • Spelt dumpling filled with walnuts and cottage cheese with berry sauce (early Middle Ages).

TO BEGIN
  • Organic liqueur and organic herb cordial, black radish with pumpkin seed oil, cake with cracklings.
SOUP
  • Pork bone soup with homemade noodles.
MAINS
  • Grilled sausage, blood sausage, roast pork ribs and back.
SIDES
  • Sautéed potatoes, beans with cracklings, sour turnip and baked sauerkraut with air-dried Pohorje ham.
DESSERT
  • Baron layer cake (gibanica) with seasonal fruit sauce and poached Tepka pears or baked apples stuffed with walnuts, honey and Jurka grape jam.

Baron stews and soups – the taste of tradition

POHORJE STEW
  • A dish made by our grandmothers who had little imagination, but a lot of culinary experience. The dish contains at least one type of corn and a legume, organic Pohorje beef, smoked pork, and various vegetables and spices, as well as other ingredients including cider and sour cream. It can also be prepared as a vegetarian dish.
HISTORICAL STEW
  • An ancient stew from the Bronze Age based on the local archaeological heritage – a historical Heriterra dish. The stew is made from spelt/emmer wheat, beef, carrots, kohlrabi, onions, mushrooms, garlic, mangold, parsley, savory, juniper berries and lentils. It can also be prepared as a vegetarian dish.
BUCKWHEAT POLENTA WITH MUSHROOM SOUP
  • This is the right choice if you want to eat a simple and traditional dish from our ancestors. Polenta is one of the simplest and most popular Slovenian dishes, especially when it is made from buckwheat flour and dressed with cracklings. However, if we leave out the cracklings, we have a healthy dish that is great as a side dish with sour milk, mushroom soup, cabbage and chicken stew.

(jota – sauerkraut and bean stew, Szegedin goulash, sour soup).

We offer our dried ham, salami, various types of sausages, smoked meat preserved in lard (tunka), minced lard, pâté, young cheese made from cow’s milk, seasonal herb spreads, homemade or fresh vegetables, kale chips and, of course, freshly baked bread from the wood oven.
